Garlic Butter Chicken with Roasted Vegetables

A little introduction

Some of the best meals are the simplest ones. This garlic butter chicken is one of my favorite recipes because it’s quick, packed with protein, and full of colorful vegetables. It’s perfect for busy days when you want something delicious without spending hours in the kitchen.

Ingredients

Chicken

  • 200 g chicken breast
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp butter
  • Salt and black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano

Vegetables

  • 1 zucchini
  • 1 red bell pepper
  • 150 g broccoli
  • ½ red onion
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Chop the zucchini, pepper, broccoli and onion into bite-sized pieces. Toss them with olive oil, salt and pepper and roast for about 20–25 minutes.
  3. Season the chicken with salt, pepper, paprika and oregano.
  4. Heat olive oil in a pan over medium heat and cook the chicken for 5–6 minutes on each side, until golden and fully cooked.
  5. Add butter and garlic to the pan. Cook for another minute while spooning the garlic butter over the chicken.
  6. Slice the chicken and serve with the roasted vegetables.
